One thing you need to know about me, is that I LOVE cooking… when I am in the mood for it. But that’s pretty much about dinner. If I make enough to have leftovers it’s a woo-hoo moment when I don’t have to think about lunch. I hate frozen meals and coldcut sandwiches tend to be boring. So this super quick and easy shredded BBQ chicken is a dream come true. It’s filling, flavorful, low in calories and fat and high in protein. And it’s ridiculously easy too.
This photo doesn’t really do it justice, but I can tell you three different people commented on how good it smelled when I was heating it up for lunch today!!
Lazygirl Shredded BBQ Chicken
Ingredients
- 1/2 can of Costco’s Kirkland canned chicken breast (about 3.5 oz)
- 2 tbsp favorite BBQ sauce (Nutrition facts were calculated using Jack Daniel’s – Honey Smokehouse Barbecue Sauce, but I used Brady’s Delux BBQ Sauce from our local BBQ joint)
- Optional: 1 slice Jewish rye bread, toasted
Prep
- shred chicken with a fork
- add BBQ sauce and mix thoroughly
- refrigerate until ready to eat (at least 1 hr to “marinate” the chicken)
- heat in microwave for about 1 1/2 minutes on high
- serve on toasted rye bread, cut in half to make bottom and top of sandwich
Serve
Serve with a side of un-pickles (peeled and sliced cucumber lightly seasoned with salt and pepper) for a super healthy veggie side!
