I just made the best sandwich ever, no joke. I stumbled across the recipe in a post on The Frisky showcasing grilled cheese sandwich recipes. I judge food the way I unfairly judge books – by their beautiful, delicious covers… I won’t even consider attempting a recipe that is unaccompanied by a photo of the end product, and the picture for the Spinach Artichoke Grilled Cheese was calling my name. I made a few small modifications to fit with the ingredients that I had, but it was tasty.
My Modifications
- The recipe was for two sandwiches and I only made one.
- I used whole wheat bread which I lightly buttered with Brummel & Brown (margarine made with yogurt)
- I eyed the spinach and used baby spinach and didn’t chop it.
- I used only 1 clove of garlic
- I used 1 1/2 artichokes (canned)
- I didn’t measure the cheese, but I used two slices of provolone (broken up) and just eyed some shredded mozzarella (maybe about 1/4 cup?)
- Finally, I had no sour cream, so I used nonfat greek yogurt (protein!)
It probably was not the healthiest thing I have ever eaten, but it was pretty damn delicious and had healthy carbs, vegetables, and a little bit of protein. 🙂
